The classic beef tartare gets an upgrade here, paired with a homemade wild garlic mayonnaise, delicate potato chips, and pickled pearl onions. If you want to keep things quick, you can buy all three components ready-made. For a more filling meal, serve the tartare with crispy fries or just a piece of good bread. Serves 4.

Instructions
Wild garlic mayonnaise
Step 1/3
Pour egg yolks, vinegar and mustard into a blender. While blending, add the oil little by little, until the mayonnaise emulsifies.
Step 2/3
Add the wild garlic, and blend to a smooth consistency.
Step 3/3
Season with salt and pepper.
Pickled pearl onions
Step 1/4
Peel the pearl onions.
Step 2/4
Bring sugar, vinegar, water and salt to a boil in a pot, until the sugar is melted.
Step 3/4
Add the pearl onions to the warm brine, and let them steep in it, until the brine is cold.
Step 4/4
Halve the pearl onions, and then peel the onion layers apart.
Potato chips
Step 1/4
Wash or scrub the potatoes, cut them into very thin slices on a mandoline, and blanch them in lightly salted boiling water for 10 seconds.
Step 2/4
Place them on a clean kitchen towel, and let them drain.
Step 3/4
Fry them afterwards in plenty of oil at 120 degrees, until they are crispy and golden.
Step 4/4
Let them drain on absorbent paper, and sprinkle them with salt.
Serving
Step 1/3
Distribute the wild garlic mayonnaise in small dollops in a deep plate (calculate approximately 5 teaspoons per serving), and arrange the minced beef on top.
Step 2/3
Pluck the tarragon, and distribute it on the tartare together with pickled onion layers and potato chips.
Step 3/3
Season with salt and pepper.
