Here is our take on a classic burger that can easily be made on the grill, over a fire or indoors on the stove. Smash burgers give an extra crispy crust. All you need is a good iron pan or griddle. And of course a smasher / grill press.
Feel free to use ground beef with a high fat percentage. You can easily flavor the mayonnaise with a little extra Dijon mustard, paprika and chili sauce according to your preferences.

Ingredients
500 g ground beef
1 large red onion in slices
Butter for burger buns
4 burger buns (preferably brioche)
4 slices cheddar cheese
Pickled cucumbers and lettuce for serving
Mayonnaise (optionally flavored with Dijon, paprika and chili sauce)
Oil for frying
Salt and pepper
Avoid screen shutting off
Instructions
Step 1/9
Mix the mayonnaise with your favorite seasonings – for example Dijon, paprika and/or chili sauce.
Step 2/9
Divide the ground beef into four equal portions and form into balls.
Step 3/9
Heat the griddle or frying pan to medium/high heat for 3-5 minutes, and spread a thin layer of cooking oil.

When the griddle is hot, add the red onion slices for a couple of minutes until they take on color. Set them aside.
Step 5/9
Distribute the four patties (which are now shaped as balls) on the griddle and smash them with a lightly oiled smasher/grill press so they become completely flat. It doesn't matter if they are not perfectly round. The edges will be browned and get a nice crust. Give them about 2 minutes and sprinkle with salt.

Flip the patties and let them fry for another minute, then distribute the cheddar slices and let the patties finish cooking for about 1 minute more while the cheese melts.

Now place the buttered brioche buns on the griddle and let them brown for about 1-2 minutes. Keep a close eye on them so they don't get burnt.

Spread the mayonnaise dressing on the buns and now add a piece of lettuce, the patties, red onion and the pickled cucumbers.
