Meet Brian Mark Hansen
Brian Mark Hansen is considered one of Denmark's most talented chefs. In 2023 he won the world's most prestigious culinary competition, 'Bocuse d'Or', also known as the unofficial world championship of the profession. Previously, he distinguished himself with two 2nd-place finishes at 'Chef of the Year 2010' and 'Bocuse d'Or Denmark 2013'. In 2012 he won 'Dish of the Year – Game', and in 2014 received 'The Lobster Claw of the Year' at the Læsø Norway Lobster Festival. In 2016 he also won 'Dish of the Year – Pork'.

Brian Mark previously worked at Ruths Hotel in Skagen, Kong Hans Kælder, and was sous chef at Søllerød Kro between 2007 and 2011. He then became head chef at Christiansholm Slot before returning to Søllerød Kro in 2013, where he served as head chef until 2025. Søllerød Kro has held a Michelin star since 2007 – in 2024 for the 18th consecutive year – and Brian Mark maintained the inn's Michelin star throughout his tenure as head chef.

Since January 2026, Brian Mark has been head chef at Cori Table, the main restaurant at Hornbæk Hotel Cori, which is set to open during the summer of 2026. In his role as head chef, he is responsible for creating all culinary experiences rooted in the Nordic coastal kitchen with strong inspiration from the Mediterranean.

Cooking time equals resting time
When we sear steaks, we push all the meat juices towards the centre, and we need them to redistribute back through the meat – that's why we have a resting period.

The whole secret with meat is that cooking time equals resting time. That means if you cook your steaks for five minutes, they need a resting time of five minutes.
